Autumn Pasta Salad

Who says pasta salad is just for summer? This Autumn Pasta Salad brings all the cozy, colorful flavors of fall to your table...and it was a total hit at my recent Mahjong night! Made with adorable mahjong-shaped pasta, roasted butternut squash, tangy goat cheese, tart dried cranberries, and a sweet yet savory maple-Dijon dressing, every bite tastes like a fall afternoon. It’s hearty enough to serve as a side or a light main dish, and it’s the kind of recipe that makes people linger around the table a little longer.


The maple syrup gives it a hint of warmth, the cranberries add the perfect pop of sweetness, and the roasted squash ties it all together...proving once and for all that pasta salad isn’t just for summer picnics anymore.
