Greek Meatballs with Lemon Orzo

MEATBALLS
1.5 tbsp olive oil
1lb ground chicken
1/3 cup pankoÂ
1/4 cup chopped flat leaf parsley
3 tbspgrated onion
1 tbsp garlicÂ
Zest of a lemon
Juice of a lemonÂ
1 egg
1 tsp dried oregano
1/2 tsp cumin
1/4 tsp ground cinnamon
Salt and pepper to tasteÂ
2 ounces feta cheese
ORZO
2 tsp olive oil
1 tbsp garlicÂ
1 cup uncooked orzo
2 1/2 cups chicken broth
Salt and peoper to tasteÂ
1/2 cup diced roasted red peppers
2 tbsp fresh lemon juice
2 tbsp chopped fresh dill
1 tbsp chopped flat leaf parsley
Extra feta cheese for garnish
Ingredients
Directions
Combine all of the meatball ingredients listed above (except oil) into a bowl. Mix with your hands and then separate them into roughly 2 tablespoon potions and roll them into meatballs.Â
Add the olive oil to a skillet over medium low heat and cook them on all sides until they reach 165° internally. Once fully cooked remove them from the heat.
Next, add the olive oil into the skillet once it is heated, adding the garlic and add the dry orzo in and toast for 1 to 2 minutes. after two minutes, stir in roasted red peppers, lemon juice and the chicken broth. Add salt and pepper to taste and bring to a boil and back down to a simmer. Simmer until orzo is fully cooked, this should take about 8 to 10 minutes.
Once the orzo is fully cooked, stir in the fresh herbs and add the meatballs on top of the orzo. Garnish with extra feta and enjoy! You may also add Kalamata olives, if you wish, I am just and not a olive girlyÂ
