Pasta Fagioli

This cozy ground beef and ditalini soup is what I reach for on nights when I want something hearty, kid-friendly, and so easy to throw together. It’s loaded with tender pasta, a rich tomato broth, and simple veggies you probably already have on hand...carrots, celery, and onion. Everything cooks in one pot, which means less mess in the kitchen and more time actually sitting at the table together.


I love this recipe because it feels like a cross between a comforting pasta dish and a warm bowl of soup. Browning the ground beef right in the pot adds so much flavor, and the garlic, oregano, and chicken broth give it that “simmered all day” taste… without actually having to babysit it all day. The ditalini pasta cooks directly in the broth, soaking up all that goodness and making the soup feel extra hearty.


Serve it with a simple green salad and crusty bread, then finish each bowl with a sprinkle of Parmesan. It’s the perfect easy weeknight dinner, game day soup, or big-batch meal to keep in the fridge for lunches all week long.
