Pizza Enchiladas

If your house is anything like mine, pizza night is always a win...but sometimes I want to switch things up without losing those familiar flavors everyone loves. Enter these Pizza Enchiladas… and let me tell you, they’ve quickly become a staple in our dinner rotation.


This recipe is everything I love about cooking for a busy family...it’s simple, hearty, and made with ingredients you probably already have on hand. We’re talking savory Italian sausage, pepperoni (because more is more), melty mozzarella, and rich pizza sauce all wrapped up in soft tortillas and baked until golden and bubbly. It’s cozy, a little fun, and feels like something different without being complicated.


I usually make this on one of those nights when we’re coming home from sports or activities and everyone is hungry now. It comes together quickly, feeds a crowd, and bonus—leftovers reheat so well (if you have any left 😉).
