Cheesy Beef Taco Skillet

If you love taco night but want something even easier, this Cheesy Beef Taco Skillet is about to become a weeknight favorite. Everything cooks together in one pan...seasoned ground beef, rice, corn, tomatoes with green chilies and plenty of cheese, so you get all the cozy taco flavor without a pile of dishes.


This is one of those dinners that works especially well on busy nights because it uses simple pantry and freezer staples and comes together with very little prep. The rice cooks right in the skillet with the beef and chicken broth, which means it soaks up all of that taco seasoning and tomato flavor as it cooks.


The best part, of course, is the layer of melty Mexican blend cheese on top. Once the rice is tender, sprinkle the cheese over everything, cover just long enough for it to melt, and dinner is ready. You can serve it as-is or add your favorite taco toppings like sour cream, avocado, cilantro, salsa or crushed tortilla chips.
