Crunchwrap Roll-Ups

These Crunchwrap Roll-Ups are my easy way to switch up taco night. Ground beef and onion cook with taco seasoning, and then Colby Jack cheese melts right into the meat. Spoon that onto flour tortillas and add a little more cheese, pico, crispy tortilla strips and a spoonful of queso. Roll them up, brush with olive oil, and bake until golden. They only need about 15 minutes in the oven, which gives you just enough time to set out the toppings and call everyone to the table. We finish ours with shredded lettuce, extra pico and sour cream, and everyone can top their own.

Once the beef is cooked and your tortillas are filled, these Crunchwrap Roll-Ups only need about 15 minutes in the oven. Just enough time to get the toppings ready, clear off the table, and call everyone in for dinner!
